Prawn Soup

Coq Au Vin (Chicken in wine sauce accompanied with mashed potatoes)

Exotic Fruit Salad

*Serves four adult sized portions

Prawn Soup


  • 250g Raw King Prawns
  • 1 clove garlic
  • 140 shiitake mushrooms
  • 2 tbsp Thai green curry paste
  • 400 g reduced fat coconut milk
  • 2 chillies
  • 200ml vegetable or fish stock
  • 300g medium straight to wok noodles
  • salt

Preparation time  : Approx 5mins
Cooking time  : Approx 10mins.

Heat the pan / wok, add oil, and then stir fry chopped garlic, mushrooms and chillies together for 3 – 5 minutes. Set aside in a dish. Add curry paste into wok and fry for about 2 minutes, pour in the coconut milk; bring to a boil. Add the king prawns, noodles and vegetable stock. Add salt to taste and allow to simmer for about three minutes and then serve piping hot.

Coq Au Vin


  • 1 large onion,
  • 5oz of steaky bacon
  • 8 pieces of chicken thighs
  • 3 cloves of garlic
  • small bunch flatleaf parsley chopped
  • 6 tablespoon of olive oil
  • 250g of double cream
  • 150g of mushrooms 
  • 1/4 bottle of red wine
  • 2 tbsp balsamic vinegar.

Preparation time  : Approx 15mins
Cooking Time  : Approx 30 - 45mins

Heat a thick bottomed casserole dish on the stove, add 4 table spoons of olive oil, and pour in chopped onions, garlic and bacon until just browned (2-3 minutes). Add mushrooms, turn up the heat and add ¾ of the red wine, chicken stock and vinegar. Dish aside in a plate. Using same casserole dish, add 2 tablespoons of olive oil. Once hot, add your chicken thighs fry until it is evenly golden on all sides. Pour back in the sautéed onions and bacon, cover and bring to the boil. Once the chicken is cooked, drain from the sauce and add 250gram of double cream into the sauce (according to personal taste). Allow to simmer and thicken. Put the chicken back in simmer for about a minute. Take off the stove, sprinkle chopped parsley leaf liberally, dish and serve.

Exotic Fruit Salad


  • Pineapple
  • Grapes
  • Raspberries
  • Blueberries
  • Mangoes
  • Mandarin
  • Apples

Preparation time: Approx. 10 mins (depending on how fi nely chopped the fruits are)

De-seed and cut fruit into bite-sized chunks. Mix in the bowl, add a sprinkling of lemon juice. Mix thoroughly in a clean bowl, cover, and put in the refrigerator. Serve cold.

Mashed Potatoes


  • 5-6 medium-size Irish potatoes
  • 50 ml double cream or full fat milk
  • 1 tablespoon of butter
  • a dash of white pepper
  • 500 ml of water
  • 1 teaspoon of nutmeg
  • salt to taste

Peel, wash and cut the potatoes, put in a sauce Peel, wash, and cut the potatoes. Put in a saucepan and allow to boil until cooked. Add salt to the potatoes as it’s boiling. When cooked, drain and mash with a masher and set aside. Pour the cream/milk in a heated pan, add the butter, nutmeg, and white pepper. Then add the mashed potatoes and mix together on a hot stove until very smooth and fluffy. Serve.
